An Important Manufacturing Criterion for the User

Particle size is not directly a property of gelatine, nor does it influence quality. However, it is an important manufacturing criterion for the user.

As most factories have different types of processing equipment, particle size should be agreed between supplier and user in order to ensure optimal processing.

Generally available particle sizes:


0,1 mm 140 mesh very fine milling

0,5 mm 35 mesh fine milling

0,8 mm 20 mesh normal milling

10 mm 3/8 inch very coarse milling


In principle, low concentrated gelatine solutions can be prepared using all particle sizes. However, for highly concentrated solutions, coarse particles should be used; these tend not to aggregate and produce fewer air bubbles when being processed. It must be taken into account, however, that such coarse particles take up water more slowly so that they swell more slowly and are slower to form solutions.
